Waffles & Strawberry Syrup

As mentioned above, this recipe is great for special occasions (or anytime you want some good waffles). It’s just the kind of thing to surprise your S.O., mom, or whoever with breakfast in bed.

Or if you’re planning a brunch, a waffle bar is the perfect crowd pleaser AND almost everything can be made ahead!

So start with the waffle recipe and tear each into quarters (not everyone is going to need an entire waffle, and that saves you some prep time/ingredients). You can make these the night before and reheat them easily the next day. Or if you have someone available, set up a waffle iron and have someone make them fresh right then and there!

There’s also a blueberry lavender syrup that I put on everything, bananas foster sauce, assorted fruit like bananas, strawberries, blueberries, blackberries, good ol’ maple syrup and things like honey, yogurt, ice cream (yes!), chocolate syrup or caramel and some extra fun toppings like nuts, chocolate chips, marshmallows and sprinkles!

Let everyone top their waffle as they wish for a pretty hands-off and fun experience!

Start the strawberry syrup simmering (say that five times fast) while you mix the waffle batter and then whip up the whipped cream at the very end – it takes less than 5 minutes.

Speaking of whipped cream, did you know that the narrower the container you mix it in, the faster it will come together? If you’ve made whipped cream before and found that it took forever, try using a mason jar, quart sized takeout soup container, large wide-mouthed cup, or really anything that is tall and just fits your immersion blender or hand mixer.

Ingredients

Scale

For the Waffles:

  • 2 cups All Purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 Tbsp granulated sugar
  • 2 eggs, yolks and whites separated
  • 1 1/2 cups buttermilk
  • 4 Tbsp unsalted butter, melted
  • 1 cup cold club soda
  • 1 tsp vanilla extract
  • oil, to grease waffle iron

For the Strawberry Syrup:

  • 1 lb strawberries, hulled and cut into about 1/4” cubes
  • 1/4 cup orange juice
  • 3 Tbsp sugar
  • 1/2 tsp vanilla extract

For the Whipped Cream:

  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 1 tsp powdered sugar

Instructions

For the Strawberry Syrup:

  1. In a small saucepan over medium-low heat, combine the strawberries, orange juice, sugar and vanilla extract.
  2. Simmer uncovered for 25-35 minutes, stirring occasionally, until much of the liquid has evaporated. Set aside to cool.

For the Waffles:

  1. Preheat your waffle iron and gently oil the plates with oil and a paper towel.
  2. While the strawberries are simmering, combine the flour, baking powder, baking soda, salt and sugar in a large bowl.
  3. In a separate medium bowl, use a hand mixer to whip the egg whites on high speed until stiff peaks form. In another bowl, whisk together the yolks and buttermilk. Gently pour in the melted butter while whisking.
  4. Fold the buttermilk mixture in with the egg whites, then fold in the club soda as well.
  5. Gently combine the wet mixture with the dry until mixed. There should still be lumps.
  6. Fill the waffle iron with about 1/2 cup of the batter and cook according to manufacturer directions, typically 5-10 minutes and flipping at least once or twice. When it stops steaming, it’s usually a good indicator that the waffles are done. Adjust amount of batter as needed, according to the size of your waffle iron and preferred waffle size.

For the Whipped Cream:

  1. Pour the heavy cream, vanilla extract and powdered sugar in a tall, cylindrical container that fits your immersion blender or hand mixer (or use a stand mixer). Large mouth mason jars, cups, and soup takeout containers work well for this.
  2. Mix on high speed until it rises and thickens, to the consistency you prefer, usually about 1 or 2 minutes.
  3. Serve waffles warm, topped with the strawberry syrup and a dollop of whipped cream.

The total time is a wide estimate – if the strawberry sauce is cooking while the waffles are in the iron, then 40 minutes (5-10 per waffle) of total cook time is more realistic.

Keep the cooked waffles in a 200°F oven to keep them warm until serving.

  1. I’m a big fan of waffles and we have a tradition of making waffles or pancakes at home every Thursday (I have both children at home with me on that day). It’s interesting to see club soda in your list of ingredients! For that reason alone, I would be curious to try this recipe 🙂

  2. I have major waffle envy right now. I recently discovered that waffle irons and me do not mix. LOL. For the life of me, try as I might, I cannot get a waffle to turn out light and fluffy. I blame my waffle iron; after all, it can’t be something that I’m doing wrong! 😉 I noticed that you folded the egg whites into the waffle mixture. I have not done this step before so I’m going to try it again. Fingers crossed! 🙂

  3. I hardly ever order waffles and I never make them, but every time I have them I am reminded of why I should ALL of the time. They really are super delicious, and I bet this strawberry sauce just takes it over the edge.
