Apple Cheddar Quiche
Apple Cheddar Quiche is the sweet and savory quiche of your dreams. Step out on a limb and try this creative recipe. Cheesy, fruity, earthy – this quiche has it all.
Maple and Bacon. Pepperoni and Pineapple. Chocolate and Pretzel. Watermelon and Feta. Some of the best things are sweet and savory, much like today’s recipe!
Apple, cheddar cheese and radicchio combined in this buttery quiche makes for a surprisingly sweet and savory bite of brunch-y goodness. Don’t knock it ’til you try it!
FALL IS HERE FOLKS! Okay, maybe I’m like a month ahead… But not in my mind. With the beginnings of the first fall harvest here in Texas, I am already in the mood.
So, to start I’ve made quiche. And not just any quiche, but one with apple, cheddar and radicchio! If you have never tried this combination of flavors, I think today is the day to do it.
This (make ahead!) quiche can be a little time consuming, especially if you make your own crust. Which, by the way, please make your own. It’s pretty fun and I love this recipe from Sally’s Baking Addiction.
So, to save time, I suggest making the dough ahead of time. Fun fact: it can be frozen for up to 3 months! Use half of the recipe now and save half for your pumpkin pie in November!
Aside from the crust, this quiche is incredibly easy to make. Quiche in general is incredibly easy to make. Just toss in ingredients and bam! Done! And though I’m not to be confused with Emeril, I do think this assortment of (admittedly, kinda odd to the uninformed) flavors really knows how to pack a sweet and savory punch.
To add to the amazing-ness, I baked these in some adorable mini-tart pans. These make a perfect single serving and look extra cute for brunch.
But, serving these in my palm-sized pans or from your favorite pie mold the results will remain the same–a delicious and unique way to usher in the Fall season.

- Total Time: 1 hour 5 minutes
- Yield: 6 4" quiches 1x
Ingredients
- 1/2 recipe homemade pie crust or store-bought equivalent
- 6 eggs
- 1 cup cream
- 1/2 fuji or gala apple (or another sweet red apple), in small cubes
- 1/2 cup cheddar cheese, shredded
- handful of radicchio, about 1/2 cup, roughly chopped
- pinch of salt
- 1 TB butter or oil, for sauteing
Instructions
- Prepare the pie dough the night before, to save time.
- Preheat the oven to 350°F (177°C).
- In a small skillet, sauté the radicchio in the butter or oil over medium heat, just until wilted.
- On a floured work surface, roll out the dough in all directions until it is about 1/4″ thick.
- Arrange 6 mini-tart pans on the dough and cut the dough in a circle around each, leaving enough to press into the sides of each pan. Re-work and roll out the dough again if needed. Tuck in the crust with your fingers and trim any overhang and discard, or bake into pie chips.
- Using pie-weights, pre-bake (or blind bake) for 8 minutes. Use a sheet pan for added stability.
- In a bowl, whisk together the eggs and cream, then stir in the apple, radicchio and salt.
- After 8 minutes, remove the tarts from the oven, remove the pie weights and divide the egg mixture evenly among all 6 tarts. Top each tart with cheese.
- Bake for 35-45 minutes, or until the top is golden and the center is firm.
- Rest for 5 minutes and serve!
Notes
If you don’t have pie weights, line each tart with foil or parchment and fill them with dry rice or beans. Either discard the rice or beans after baking or set aside and label them as pie weights for future use! Don’t try to cook with these again-the texture will be lacking.
Baked quiche can freeze very well for up to 2 months. Thaw overnight and bake for 15-25 minutes or until heated through.

I don’t know if you welcome comments from someone who altered your creative recipe but here goes. When I find an interesting recipe, I want to try it immediately but do not typically have all of the ingredients on hand (20-mile round trip to the nearest grocery store). If I have what I consider to be the essentials, I improvise. In this case, I had no radicchio so substituted fresh spinach. I added shitake mushrooms only because I seem to need them in every quiche. I also added some cinnamon and nutmeg because the apple was asking for it. This thing is scrumptious. Thank you for the inspiration.
