Bourbon Sweet Potato Casserole with Candied Pecans

These can be served on their own with a pat of butter, making them really creamy and satisfying, and sprinkling some crunchy candied pecans on top adds more texture.

tips for preparing a Thanksgiving meal
Know your limits. It’s easy to have grand plans to make everything from scratch. Sometimes that’s doable, and sometimes it isn’t. Don’t feel bad about picking up convenient pre-made options like rolls, cranberry sauce or pie.
Outsource tasks to save time. Use Grocery Delivery or DriveUp & Go™ to save time shopping, or order entire holiday meals online. Safeway offers this at safeway.com/orderahead.
If you do choose to shop yourself, do it early or during business hours when the stores tend to be quieter. Get the essentials and shelf stable items early.
Prep. Prep. Prep. There are some dishes you can prepare a day or more in advance. Most casseroles, including today’s recipe, can be prepped right up to baking, cranberry sauce can be made ahead and many desserts can be prepped and chilled. But this extends beyond making entire recipes. Chop your veggies and measure out spices too. All of this helps day-of prep go smoothly.
Create a timeline and think about the limits of your kitchen. If you have one oven and it’s small, assume you’ll only have about 30 minutes of free oven space between the time the turkey comes out and is ready to serve. Consider making casseroles first and warming them in the drawer beneath the oven, or use other appliances like the stove, pressure cooker, slow cooker or air fryer for sides.
Also note that frozen turkeys need between 30 minutes – 24 hours thawing time per pound (counter or fridge), so make that the first step.

- Yield: 6–8 servings 1x
Ingredients
- 2 lbs sweet potatoes
- 3/4 cup light brown sugar
- 1/4 cup salted butter, melted
- 1/4 cup bourbon
- 1/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/8 tsp ground cloves
- 2 large eggs
- 5 oz evaporated milk
- butter or oil, for greasing
- candied pecans, store bought or homemade
Instructions
- Preheat oven to 375°F.
- Bake sweet potatoes on a sheet pan 1 hour or until tender. Cool 15 minutes before handling.
- Reduce oven temperature to 350°F and grease a 9″ casserole, 9×9″ baking dish or ramekins.
- Remove the skins from the potatoes and mash with a fork or masher until smooth. Stir in the brown sugar, melted butter, bourbon, cinnamon, nutmeg, cloves, eggs and evaporated milk until smooth.
- Transfer to prepared baking dish and bake 1 hour 10 minutes or until a toothpick inserted in the center comes out clean.
- Top with butter and candied pecans to taste.
