Cinnamon Honey-Baked Apples with Yogurt and Pecans

An awesome fall dessert that can be enjoyed anytime of year. These cinnamon honey-baked apples are the perfect dessert when you want all of the flavors of apple pie!

Ingredients

  • 4 dessert apples
  • 4 cinnamon sticks
  • 1/2 cup unsalted butter
  • 2 Tbsp honey, plus more for topping
  • 12 cups vanilla yogurt
  • 1/2 cup chopped praline pecans

Instructions

  1. Preheat the oven to 300°F.
  2. Cut parchment into 4 pieces large enough to wrap your apples.
  3. Core each of the apples and place inside the parchment.
  4. Arrange in a 9″ x 9″ pan or casserole dish.
  5. In a microwave safe bowl, heat the butter and honey 30 seconds at a time and stir until fully combined.
  6. With the apples wrapped in parchment, open slightly, place a cinnamon stick in each core, then spoon the honey butter mixture over each of the apples.
  7. Tie the parchment closed with kitchen twine.
  8. Bake for 25-30 minutes, or until the apples are soft and easily pierced with a knife.
  9. Cool for 5 minutes, discard the parchment and remove the cinnamon stick from each apple.
  10. Place on a serving dish and top with a drizzle of honey, a generous helping of yogurt and the chopped pecans.

Ice cream is another great topping in place of yogurt!

These can be made in the microwave too. Heat uncovered for 5 minutes, or until it pierces easily with a knife.
