Easy Summer Entertaining with BBQ Chicken Sliders

Walking into my store I was immediately greeted with the sights and smells at the deli, so I knew I had to stop there first.

The Safeway deli has a reputation in my area for being affordable, convenient and of good quality. Many of my friends like to hop in there for lunch or at the end of the day for an easy dinner. Working from home I’m rarely presented with a need for a quick lunch out, so I was excited to try it. I need to experience the hype.

I grabbed 4 pieces of fried chicken right at the counter and another clerk helped me with generous portions of their made in store chicken salad and potato salads. Their whole roasted chicken was also nearby.

At their colorful cut fruit wall I decided on some bright mixed berries, and then made my way to the bakery for chocolate chip cookies and a cherry pie.

I also made sure to grab accompaniments – dipping sauce for the chicken, croissants and buns for the chicken salad, ice cream to serve with the pie, and then the ingredients needed for the recipe below: coleslaw mix, mayonnaise, fresh pineapple and bbq sauce.

I served the fried chicken with some honey mustard and bbq sauce – it’s perfectly crispy and a solid meal totally on its own.

Chicken salad is excellent on croissants. I got about 1 pound and it filled 6 croissants, which can be cut in half again for 12 palm-size half sandwiches.

Cherry pie a la mode is a must, and chocolate chip cookies and fresh fruit means there’s lots of options for grazing.

I’m the kind of person that can snack on roasted chicken and be perfectly satisfied, but it’s one of the most versatile items in their deli if you want to get creative without too much fuss.

Which brings me to today’s recipe!

Simple prep and simple ingredients doesn’t have to mean simple flavor. These bbq chicken sliders are easy to prepare and packed with sweet, sticky barbecue flavors.

taste and texture

Tangy mayonnaise, crunchy coleslaw mix, roasted seasoned rotisserie chicken, fruity pineapple and bbq sauce all comes together on a soft brioche slider bun to make the best bbq sliders.

Choice of bbq sauce is up to you. Using a honey based sauce leans into the sweetness of the brioche and pineapple while using a bourbon or chipotle sauce will give these a little kick.

ways to use up leftovers

Honestly? I’m just gonna assume you’re going to eat the bbq sliders until they’re gone, because they’re that good. Leftover pineapple is yummy in creamy cocktails and popsicles, or pizza if you’re into it.

Fried chicken makes awesome sliders too – try using that on the brioche buns with just bbq sauce and some ranch dressing.

If you’ve never tried a pie milkshake, now is the time. Blend leftover vanilla ice cream and cherry pie with a little bit of vanilla extract and some milk (if needed). Wanna be extra? Add malted milk powder to make it a malt.

Save extra croissants for breakfasts this week. Serve with leftover fruit, greek yogurt and honey, or do a chocolate version with hazelnut spread and fruit.

If you run out of croissants or get tired of tiny sandwiches, chicken salad is great with crackers, in lettuce wraps or with celery.

Dress up ramen with a soft boiled egg, green onion, sprouts and leftover rotisserie chicken. Or use the chicken in lettuce wraps, quesadillas or in place of pork on my bbq nachos.

Tangy mayonnaise, crunchy coleslaw mix, roasted seasoned rotisserie chicken, fruity pineapple and bbq sauce all comes together on a soft brioche slider bun to make the best bbq sliders.

Ingredients

Scale
  • 12 brioche slider buns, sliced in half
  • 2 cups chopped rotisserie chicken
  • 23 cups coleslaw mix
  • 1 cup chopped fresh pineapple
  • mayonnaise, to taste
  • bbq sauce, to taste

Instructions

  1. Spread a layer of mayonnaise on the bottom bun of the slider.
  2. Next, add the coleslaw mix and chopped rotisserie chicken, then top with chopped pineapple and a drizzle of bbq sauce.
  3. Place the bun on top and fasten with a decorative toothpick or small skewer.
  4. Repeat with the remaining sliders.

Notes

Tools:

  • toothpicks or small skewers

Use a honey based bbq sauce for a sweeter sandwich, or bourbon or chipotle bbq sauce for some spice. I used honey bbq sauce in this recipe.
