So y’all know I’m no stranger to potato wedges. In fact, I love potatoes so much I made an entire collection of ways to use them (coming soon).
Today’s recipe uses the same seasoning as my BBQ Potato Nachos. The biggest difference is these use Russet potatoes instead of red potatoes, and while those are sliced into “chips” these are sliced into wedges.
So rather than sifting through that recipe and adapting it on your own, I thought it was so good it needed its own post. It’s my go-to spice blend for french fries and seasoned potato wedges, like these.

You don’t need anything green to garnish these. It just looks pretty and I’m extra.
There are many ways to serve these. They’re great with burgers, sandwiches and hot dogs of course, but there are also several other awesome combinations.
Top them with BBQ, cheese and sour cream like noted in that BBQ Potato Nacho post, or top them with chili and cheese. Smother them with queso to make really good cheese fries. Or you can even serve them with breakfast, as I did this morning.
I used Russet potatoes in this recipe. They make the quintessential french fry, a dry and crispy outside with a fluffy, creamy inside. Red potatoes and yukon potatoes are also great roasted, but they have a different texture. If you try that, just bear it in mind.
And if you have them plain, try fry sauce! We started buying it recently and it’s awesome. Excuse me while I go figure out how to make it at home…

Roasted Seasoned Potato Wedges

Flavors like garlic, onion and paprika make these awesome roasted seasoned potato wedges. They’re easy to prepare and an instant hit at the table.

Ingredients
2 lbs Russet potatoes, sliced into wedges
1 tsp garlic salt
1 tsp onion powder
1 tsp salt
1 tsp paprika
2 TB olive oil
Instructions
Preheat the oven to 400F and line a sheet pan with foil.
Mix the garlic salt, onion powder, salt, paprika and olive oil in a small bowl. Place the potatoes in a mixing bowl and pour the spice and olive oil mixture over them. Toss to fully coat, then turn them out onto the prepared sheet pan and arrange in a single layer.
Bake for 20 minutes, flip and bake for another 15-20 minutes or until golden and cooked through.
