Ingredients

- 1 bunch spinach (or 16 oz baby spinach)
- 1 clove garlic
- 3 tsp minced garlic
- 2 Tbsp + 1 tsp olive oil
- salt
- pepper
- asiago cheese
- 4 slices Italian bread
Instructions
- Heat about 2 Tbsp of olive oil in a skillet over medium heat. Add 3 tsp minced garlic and cook until it becomes fragrant, about 1 minute.
- Throw in the spinach and mix with tongs, tossing until the spinach is dark, soft and glistening with oil, about 1 minute.
- Add salt and pepper to taste.
- Remove from heat.
- To prepare the bread, spray or drizzle each slice with olive oil.
- Cut the garlic clove in half and rub it over the slices of bread.
- Broil or grill the bread over high heat until slightly crispy and golden.
- Top the bread with the spinach mixture.
- Grate fresh asiago cheese on top and season with salt and pepper to taste.
