Spinach Asiago Bruschetta is a quick and easy appetizer with spinach and asiago cheese. Great for when you want something a little different than typical bruschetta.

Ingredients

  • 1 bunch spinach (or 16 oz baby spinach)
  • 1 clove garlic
  • 3 tsp minced garlic
  • 2 Tbsp + 1 tsp olive oil
  • salt
  • pepper
  • asiago cheese
  • 4 slices Italian bread

Instructions

  1. Heat about 2 Tbsp of olive oil in a skillet over medium heat. Add 3 tsp minced garlic and cook until it becomes fragrant, about 1 minute.
  2. Throw in the spinach and mix with tongs, tossing until the spinach is dark, soft and glistening with oil, about 1 minute.
  3. Add salt and pepper to taste.
  4. Remove from heat.
  5. To prepare the bread, spray or drizzle each slice with olive oil.
  6. Cut the garlic clove in half and rub it over the slices of bread.
  7. Broil or grill the bread over high heat until slightly crispy and golden.
  8. Top the bread with the spinach mixture.
  9. Grate fresh asiago cheese on top and season with salt and pepper to taste.
