- 6 large whole carrots, peeled and sliced in half lengthwise (or 1 lb baby carrots)
- 2 Tbsp olive oil
For the Rub:
- 1/4 cup light brown sugar, lightly packed
- 1/2 Tbsp salt
- 1/2 Tbsp chili powder
- 1/2 Tbsp garlic powder
- 1/2 tsp cayenne pepper
For the Glaze:
- 1/4 cup light brown sugar, lightly packed
- 1/2 cup honey or maple syrup
Instructions
- Preheat the oven to 400°F.
- In a small bowl, combine the brown sugar, salt, chili powder, garlic powder and cayenne pepper.
- Line a baking sheet with parchment paper.
- Lay out your carrots in a single layer and drizzle the oil over them, spreading gently to make sure they are fully coated.
- Rub the brown sugar mixture over the carrots, coating them thoroughly, and cook for 40 minutes, until soft. Let cool 5 minutes.
- While the carrots are cooling, combine the brown sugar and honey (or maple syrup) in a small bowl.
- Microwave for about 30 seconds – 1 minute until it is thin and smooth when stirred.
- Remove carrots to serving dish and toss with the brown sugar glaze. Enjoy hot.
